Middle Eastern Egg Sandwich
A toast-style sandwich that came out of nowhere but was super delicious!
Composed of a naan bread, topped with decadent mayo and a simple but super good egg mixture that I learned while cooking with Syrian women in Toronto.
For 4 people
Egg mix
4 hard-boiled eggs, crushed
A good handful of parsley
Olive oil
Salt and pepper
Mix everything together in a bowl.
Harissa mayonnaise
1 tbsp. harissa
4 tbsp. mayonnaise
1 tbsp. maple syrup
1 tsp. lemon or lime juice
1/2 tsp. garlic powder
Salt and pepper
Mix everything together in a bowl.
