Queijo coalho

A simple recipe, served everywhere in Rio… in the street, on the beach! But this little sweet and salty makes it extraordinary!

And José, met while consuming at his little street food stand, introduced me to the skewers of this divine elixir! I had the chance to cook with him afterwards, in his house, and above all, to hear him play the guitar.


For about 4 people, as a side


400 g halloumi or Doré-mi cheese

2 tbsp. molasses (yes, Brazil is a big sugar cane producer!)


Cut the cheese into cubes

In a skillet over medium-high heat, grill on each side


Serve on a plate, drizzling a little molasses over each piece.
