Eggs stuffed with chorizo

Thank you to the beautiful entrepreneur Nathaly Riverin, president of Canary Red star and dla Pop-up garden shop, for making me one of my favorite dishes: mimosa eggs, but so pimped with flavors that my pleasure was quintupled!!

For 6 eggs

6 eggs
Chorizo, cut into small pieces
Arugula
Fresh basil
Chives
Sriracha
Mayonnaise
Parmesan (optional)
Salt and pepper

Cook the eggs according to Francis Reddy's perfect method (transmitted from Francis to Daniel Vézina to Nathaly!!). Put 1 cm of water in the bottom of a saucepan. Add the eggs. Cook over high heat, covered, for 6 minutes.

Remove the shell of the eggs, cut in half, remove the yolks and put them in a bowl. Add remaining ingredients. The quantity varies according to your tastes!

Return a spoonful of the mixture to each of the egg halves.
