My Armenian Eggs

Breakfast, lunch, supper. Eggs that are out of the ordinary, that take your hair off your daily routine, and that are very much worth trying!

Make a change to weekend brunch and make the ordinary extraordinary!


For 1 person

2 eggs

2 tbsp. tablespoon olive oil

2 tbsp. feta cheese, crumbled

A Spice Affair Armenian Pepper* (failing that, paprika)

1 tbsp. dill, chopped

Salt and pepper


In a skillet over medium heat, heat the oil gently. Beat the eggs in a small bowl and add to the skillet. Stir gently constantly, until they are cooked but still a bit runny. We want a silky texture!

Add the feta, coat in the eggs and adjust the seasoning (be careful, the feta is already quite salty!).

Serve and garnish with Armenian pepper and dill.
