Menemen (Turkish eggs with peppers, onions and tomatoes)

A Turkish recipe good for breakfast, lunch and dinner!!

Menemen (oeufs turcs aux poivrons, oignons et tomates)

For about 4 people

 

4 large tomatoes, finely diced

1 small onion, chopped

4 eggs

1 green bell pepper, finely diced

1 piece of sausage (optional)

A little olive oil

A pinch of spices of your choice (take an A Spice Affair mix or otherwise make your own mix. Ex.: a pinch of salt, pepper, dried mint (1/2 tsp), cumin (1/2 tsp), red pepper flakes (1/4 tsp), paprika (1/2 tsp), coriander powder (1/2 tsp).

 

In a skillet over medium heat, sauté the onion in the oil for 2 minutes.

Add the peppers and sauté them for 2 minutes as well.

Add the tomatoes. Season, stir and wait 5-10 minutes for the tomatoes to soften well.

Once the preparation is stewed, make 4 holes and add the eggs either by breaking them into each of the holes.

Let it cook gently so that the yolks remain runny.

Eat with good bread by dipping it directly into the pan!
