Discovering this Korean dish was a revelation for me! A different kind of poké em version. Flavors just as explosive!
For 14 bowls (uh yes, guest of the visit!!)
Garnish with what you want from the following toppings:
Spinach sautéed in oil and garlic, garnished with sesame seeds
Zucchini ribbons, sautéed in a little sesame oil
Julienned carrots, sautéed in a little garlic and sauce soya
Sticky rice (jasmine rice style)
Fried egg
Shitake mushrooms marinated for 5 minutes in sesame oil and soy sauce
Seasoned beef
1 kg ground beef
2 tbsp. toasted sesame oil
8 green, white and green onions separated (keep the green to decorate the dish)
2 cloves of garlic, finely chopped
2 tbsp. chopped ginger
4 tbsp. brown sugar
4 tbsp. tablespoon soy sauce
In a skillet over high heat, brown the beef in the sesame oil, breaking it up with a wooden spoon. Add the white of the green onions, the garlic and the ginger. Continue cooking for 1 minute. Add brown sugar and soy sauce. Cook for 3 minutes or until the meat is completely cooked. Remove from heat.
Gochujang sauce
1 cup fermented chili paste (gochujang)
8 tbsp. brown sugar
8 tbsp. rice vinegar
4 tbsp. soy sauce
4 tbsp. toasted sesame seeds
2 green onions, chopped
Mix all the ingredients.
